Nothing beats this huge hunk of pork with a crackling crust and a sticky sweet glaze from Gettin Basted!
Ingredients
-
1 Whole Ham (We choose Marble Ridge Farms!)
-
1 cup Dijon Mustard
-
2 cups Brown Sugar
-
½ cup Honey
-
¼ cup Blues Hog Sweet & Savory Seasoning
-
2 cups Apple Juice
Directions
Preheat your Gateway Drum to 300ºF. Make sure your ham is fully thawed before cooking or else the outside will overcook before the middle is done.
Plop your hog directly on the grate of your Gateway and start cooking (you may need to use the second rack level depending on the size of your ham).
Cook for 3 hours turning every 30 minutes and cook until reaching an internal temperature of 135ºF.
Remove the ham from the rack and place it in a foil pan, make diagonal cuts across the ham about an inch (2 ½ cm) apart to create a diamond pattern.
Rub the dijon mustard into the ham, then the brown sugar, and drizzle it with honey.
Sprinkle the Sweet & Savory Seasoning over the ham, add the apple juice to the base of the pan, and place it in the Gateway for an additional 30 minutes.
Remove the ham, let rest for 30 minutes, and enjoy!
