Remove membrane from each rack of ribs. Combine Pork 2 cups Marinade mix with 20 oz. water, shake, and inject between each bone.
Season generously with Sweet & Savory followed by Cajun Bayou. Flip and repeat on other side. Let sit for 30 minutes.
Hook rib hanger hooks on each rack about 2 bones deep. Set rib hanger attachment on top row, and hang ribs. Check at the 30 minute mark.
At the 1 hour 20 minute mark, remove from heat to wrap. Place in aluminum foil with a generous coating of Tennessee Red and SunDrop. Change rib hanger kit to regular grate and place wrapped ribs on for 45 more minutes or until internal temperature is 208-212℉.
Coat generously with Champions’ Blend and Sweet & Savory and let sit on heat for 10 more minutes until sauce is tacky.
Remove, slice, and enjoy!
